Black beans and rice was a meal that I had very often growing up. I would come home from volleyball, and be so excited if my mom had black beans and rice for dinner. It was the easiest meal, and just felt so comforting and filling. My favorite part of the meal was definitely the bacon that we topped it with because bacon just makes everything better. That was the meal that inspired this Black Bean and Rice Soup. This soup takes it up a notch with an even cozier version!
This Black Beans and Rice Soup is creamy and comes together in one pot. It starts with some onions, garlic, and red pepper. The red pepper was a great addition to add some extra veggies. Brown rice adds some bulk to the soup and soaks up all the flavor. The next main ingredient is the black beans. One can is blended up to make the soup a little thicker. Another ingredient that makes this soup creamy and smooth is a little sour cream or greek yogurt. The tang of the yogurt really helps balance out the black beans and salt. My favorite ingredient and probably most peoples favorite ingredient is the bacon. You can use any bacon, but to lighten up this soup I used turkey bacon. It adds the perfect saltiness, flavor, and texture to the soup. Last but not least is the cilantro. This just livens up the soup and is the perfect herb to bring this meal together.
This soup brings me right back to my childhood. I love topping it with a little avocado, lime juice, and a bit of extra sour cream and bacon. Serve it with a baguette and I would be happy eating this meal all week long.
This is such a healthy and satisfying meal for any day or night of the week. I like to make a double batch to throw some in the freezer to have on hand. One bite and I am instantly feeling like a kid again. It is the ultimate comfort food and is perfect to make during the colder months!
