Breakfast Waffle Nachos

These breakfast waffle nachos might just be my new favorite recipe. Not only for breakfast, but I could eat them for lunch and dinner as well. The slight sweetness of the waffles with all the savory toppings are a  unbelievable combination. While making this recipe I was very curious as to how it would turn out. When I taste tested, I could not stop eating them! The best sign of a amazing recipe. The mix of ingredients in this nachos just all work so well together. It can also be made gluten free and vegan depending on your dietary preference.

Ingredients

It starts with the Belgium waffles. I took the easy route out and decided to use frozen waffles. I toasted up the frozen waffles and cut them in slices. It would probably be even better if you have a waffle maker and there are already 4 fluffy slices ready to go. Next comes all the toppings. I started with some soft scrambled eggs. A classic ingredient in any breakfast. Then for a little kick is some chipotle taco meat. I used Urban Accents plant based street taco meat, which is so easy to make. You could also just add a chipotle pepper to any taco meat. For some creaminess I added mozzarella cheese and avocado. I love mozzerella cheese with eggs because it is not super strong, and a mild cheese to blend with all the other ingredients. Then last but not least is a little garnish with some radish sprouts and green onion.

These waffle nachos will now be my go to with friends and family for an easy breakfast or brunch idea. They are full of so much flavor, and I just love how the savory and sweet pair together in this recipe. These breakfast waffle nachos have everything you need in a breakfast. No too sweet and with plenty of savory flare. The chipotle taco meat just works so well in this dish.  I was actually pleasantly surprised because that was kind of a risky ingredient in my opinion. If you want to really get a little crazy and add a little more sweetness, then drizzle over maple syrup.

Breakfast waffle nachos

Ingredients

  • 8 frozen or homade Belgium waffles option to use gluten free waffles
  • 1 lb chipotle taco meat I used urban accents smokin chipotle street taco plant based meat
  • 6 soft scrambled eggs use just egg for vegan
  • 1 medium avocado
  • 8 oz fresh shredded mozzarella cheese or shredded vegan mozzarella
  • chives and sprouts for garnish
  • optional to drizzle maple syrup

Instructions

  • Preheat oven to 400 and line a large roasting pan with parchment paper
  • Defrost or make waffles and quarter each waffle. Spread on pan in an even layer and place in the oven
  • Bake for 5-10 minutes until the waffles become golden brown and crispy
  • While the waffles bake brown the chipotle taco meat on a skillet. If you only have regular taco meat than you can add 1-2 chopped chipotle chili peppers depending on how spicy you like it. Then add about 1 tsp cumin, 1/2 tsp coriander, and about 1 tsp garlic powder while browning the sausage
  • Prepare the soft scrambled eggs cooking on low heat until the eggs come together.
  • Once waffles are done sprinkle meat and eggs over the nachos, as well as the shredded mozzarella.
  • Place back in the oven to allow the cheese to melt for 3-5 minutes
  • Remove from oven and add avocado and garnishes
  • Then add optional maple syrup and enjoy!
