I am a huge fan of granola. I love eating it as a snack, on top of a smoothies, or in a yogurt bowl. Plus I really enjoy making my own versions for a couple reasons. One, the big clusters are my favorite and I can make sure I have plenty of those! Two, I am able to decide what goes in the granola. So many brands add way too much sugar, and I can control how much or little I want when I make my own.
When I was thinking about making a new granola recipe, I always love putting some kind of nut butter in my recipes. Even though cookie butter is not a nut butter, it melts and cooks similar to nut butter, so why not use in a granola recipe!? Plus, it adds some sweetness and I love the hint of cinnamon. So that is exactly what I did. Cookie butter granola is now probably my favorite granola variation.
It starts with a base of puffed rice and oats. The puffed rice adds a bit of airyness to the granola while the oats give it that crisp texture. Then I added in some graham cracker crumbs for a little more cookie like flavor. Next is a little extra cinnamon. I love cinnamon and the warmth it brings to a recipe. These are all super simple and easy dry ingredients.
For the wet ingredients coconut oil is what helps create those perfect clumps. Then the star of the recipe is ofcourse some cookie butter. This is cookie butter granola after all. To sweeten the granola a little more is a some maple syrup. The sweet maple flavor pairs perfectly with the cookie flavors. Then, all you have to do is combine everything together and bake.
The hardest part of making this granola is waiting for it to cool to dive in. After it cools it is just so satisfying to break up the chunks. An added bonus of this recipe is it will also make the house smell very good! Granola is such an easy recipe to make. You combine everything in one bowl, bake, and you are done.
