Healthier Cookies and Cream Granola

I’m so excited to share this healthier cookies and cream granola recipe. How can you go wrong with anything cookies and cream flavored. The chunks of cookies combined with a sweet creaminess is just a classic favorite. This recipe is fairly simple, but of course lightened up so it does not feel so heavy. It is crunchy, has chocolate cookie crumbs, and topped with a few marshmallows and white chocolate. Now that is what I call a perfect breakfast or snack recipe.

Ingredients

This cookies and cream granola recipe begins with the chocolate cookie crumbs. It is the same recipe from the cookies and cream Rice Krispies. They are super simple and made in one bowl, but way healthier then just crushing up chocolate cookies. I love this granola recipe because the actual base of the recipe is super light and crunchy. It is made with puffed rice and puffed millet to add some bulk to the recipe but also a light crispness. Of course oats are added in for some great texture along with ground flaxseed for some extra nutrition. Almond butter is added in for a subtle creaminess with the coconut oil to allow the mixture to harden. The granola has a slight maple flavor for some sweetness. The final touch to this recipe is some dairy free white chocolate and marshmallows melted right over the top for the “cream” taste.

Have this paired with yogurt for breakfast in the morning, or even by itself with some almond milk. You can even just have it for a sweet snack or to top a smoothie. It would also make a delicious ice cream or frozen yogurt topping. I love keeping this recipe in the freezer to keep it nice and crunchy. This is such a fun variety of granola, and I hope you find all kinds of different ways to enjoy it!

Healthier Cookies and Cream Granola

A crunchy granola mixed with homeade chocolate cookie crumbs and topped a white chocolate drizzle.

Instructions

  • If making your own chocolate cookies, preheat oven to 350 and line a roasting pan with parchment paper. Melt butter and coconut oil in a small bowl.
  • In a large bowl mix together all the cookie ingredients until combined
  • Roughly press out the cookie layer on the parchement paper until it is about 1/4 in. thin.
  • Place in the oven and bake for about 10 min. Take out of the oven and break up so the cookie layer is now broken into pieces. Or crush up 12 Oreo cookies in a ziplock bag.
  • While the cookie crumbs bake mix together all the dry granola ingredients in a large bowl except cookie crumbs and white chocolate.
  • Mix the wet ingredients together in a small bowl until well combined
  • Add the crumbled cookies to the dry ingredients. Then fold the wet ingredients into the dry and mix to combine. Make sure everything is well coated
  • On a baking sheet lined with parchment paper spread out the granola in an even layer.
  • Place the granola in a 325 degree oven for 25 minutes or until lightly golden brown.
  • Once the granola is done, melt the white chocolate in a microwave safe bowl. Drizzle on top of the granola.
  • Allow the chocolate to harden and the granola to cook completely. Then break into pieces and enjoy.
  • Keep in the freezer for optimum crunch and freshness

Notes

Can sub oreo cookies for the chocolate cookies.
