If you want an easy, healthy, and delicious meal this bruschetta pasta will be right up your alley. Bruschetta is one of my favorite appetizers. My family always makes it for our Italian themed Christmas dinner. It is always a family favorite, and if you don’t get to my Aunt Jolie’s house quick enough the bruschetta will be gone. Instead of serving bruschetta with a bageutte, I decided to make a main pasta dish. This italian pasta dish was a delicious healthy way to turn bruchetta into a comforting main meal.
The bruschetta pasta starts with a very key ingredient, pasta. I used chickpea pasta to act as the protein, but an italian sausage would also be a delicious addition! Then the bruschetta addition to the pasta is just some cherry tomatoes, onions, basil, and feta (I used vegan). If you are not a fan of feta then you could use goat cheese or parmesan. The basil is probably my favorite part to the bruschetta. I think fresh herbs just brighten up and add so much flavor to a dish. Then you need plenty of garlic to really season the pasta. Since bruschetta is commonly served with a baugette I decided to add some homeade croutons to the mix. The croutons could not be any easier to make with just a little butter and sourdough bread. Cut the bread into bite sized pieces, and just bake them up till crispy. I add them right to the pasta before serving so they don’t get soggy. Last but definitely not least, a little balsamic reduction drizzle is added for the dressing. It provides a great acidity and flavor to the pasta.
Not only is this meal so flavorful, but it has some beautiful colors with the fresh basil and tomatoes. Bruschetta just reminds me of so many good memories, and so this meal is just comforting to me. If you are a bruschetta fan, and enjoy the italian flavors with the tomatoes and basil then try this meal. It will take under 30 minutes to make, and it is just a mouthful of flavor.
