When I was in high school it was a weekly thing to go to Chili’s. My sister and I would go with out friends, family, or when we had volleyball tournaments. I had a few favorite dishes from there. This included the chips and salsa ofcourse and the fajita pita. That meal actually left the menu, and I was so sad. I have recently been craving it so I decided to recreate it myself. I have to say, I think my version is even better than the Chili’s version.
This fajita pita starts with the meat. I decided to make some easy cast iron chicken seasoned with fajita seasoning. It turned out super flavorful and juicy. If you want a vegan or vegetarian option, I would roast some sweet potatoes with the same seasoning. The sweet potatoes with the chipotle sauce is one of my favorite combos. After the chicken and/or sweet potatoes are cooked, saute bell peppers and onions with a little extra seasoning. Then all that is left is to prepare is the chipotle sauce which could not be any easier. It is just some blended up chilli peppers in adobe sauce, cashew butter, and honey. It came out to be the most delicious sauce with a perfect balance of sweet and spicy. Then I serve everything on naan or pita bread with a little lettuce.
This healthy fajita pita absolutely satisfied my cravings and will be on repeat in my house. It was even better from what I remember getting at Chili’s especially with the magical chipotle sauce. I love making extra sauce to serve with sweet potato fries or on salads. I could honestly drench everything in the sauce. It is such a well balanced meal to make a delicious lunch or dinner. Even if you never got to have a Chili’s fajita pita, you won’t be disappointed when you give this a try.
