I love anything gingerbread flavored this time of year. Something about the warm spices and molasses that just gives me all the holiday feels. These Healthy Gingerbread Muffins are a delicious and comforting recipe to bake this holiday season. They have the perfect texture with the flavors of a classic gingerbread cookie. These muffins are healthier and a great way to start the morning during the holiday season.

The batter for these muffins is super easy to whip up. They don’t have butter like most muffins do because they get the moistness from yogurt and a little bit of almond butter. I also tested gluten free flour, and they turned out perfectly for any gluten free friends out there. The spices and molasses are what gives these muffins that recognizable gingerbread flavor. The batter is sweetened with coconut sugar to keep it refined sugar free. Then the dusting of powdered sugar not only makes them beautiful, it gives them that famous gingerbread finish.

Muffins are one of my favorite meal prep breakfast options for a busy week. These Healthy Gingerbread Muffins have been the best to pull out of the freezer in the morning when I am in a rush or want an easy breakfast. Plus, they pair amazing with my morning coffee.

Gingerbread has to be my favorite classic holiday flavor. I love the way it taste, smells, and how versatile the flavouring can be. These gingerbread muffins would make a wonderful gift to family and friends around the holidays. They smell amazing, taste delicious, and just bring so much holiday cheer to my household. Healthy Gingerbread Muffins

A moist muffin with all the flavors of gingerbread and a powdered sugar dusting
Prep Time 15 minutes
Cook Time 25 minutes
Servings 12

Equipment

  • 1 muffin pan

Ingredients

  • 2 1/2 cups all purpose flour
  • 1/2 cup coconut sugar
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 1/4 tsp ground ginger
  • 1/2 tsp cloves
  • 1/2 cup molasses
  • 1/2 cup milk
  • 1/2 cup yogurt
  • 1/4 cup creamy almond butter
  • 2 large eggs
  • 2 tsp vanilla
  • optional: powdered sugar dusting

Instructions

  • Preheat oven to 400 degree and grease a muffin pan with non stick spray.
  • In a large bowl, add the wet ingredients and beat with a hand mixer until evenly combined.
  • Fold in the dry ingredients. Mix till batter is smooth
  • Scoop the batter about 3/4 of the way full in each muffin tin.
  • Place in the oven for 8 min. Then decrease the temperature to 350 degrees and bake for another 8-10 minutes.
  • Remove from oven once muffins are golden and set.
  • Let cool for about 10 minutes, remove from muffin pan, and dust with powdered sugar if desired.
  • Keep in a air tight container at room temperature for 3-5 days.
