Healthy Kale Cesar Salad

 

A lot of the time salads can be boring or extremely repetitive, but not this one! This Kale Cesar Salad is without a doubt my absolute favorite. I got inspired after I ate one at a restaurant in downtown Austin.  It is filled with so many flavors and textures, and it will leave you wanting more. Have it as a side or a main meal for a nourishing and delicious dish.

This Kale Cesar Salad starts with the kale and dressing. For the longest time I did not like kale. I always just thought it was so tough and hard to chew. The key to actually enjoying kale is massaging it with the dressing. For this Cesar Salad, I kept the dressing easy using Trader Joes Vegan Cesar. It is super flavorful and perfect for this salad. Use your favorite Cesar dressing or whatever you have on hand. I like to chop the kale up finely to make it easier to bite, and then get in with your hands to massage the dressing into it. You will notice it gets soft and breaks down the tough texture.

After the kale soaks up the flavor from the dressing, it is time to add the toppings. I air fried some white sweet potatoes and crispy chickpeas. This is just the start to the crunch on this salad. Roasted white sweet potatoes add the perfect starch and a hint of sweetness. I prefer white because they just seem to hold up better then regular. The crispy chickpeas are another great addition that are nutritious but add a nutty flavor. Next up for the crunch is some cornbread croutons.  This is probably my favorite ingredient in the salad because it adds a slightly sweet flavor to balance out the salt from the dressing while also making the salad even more satisfying. Next up is some avocado slices. Buttery avocado is just my favorite in any salad and goes perfectly with this salad.  Last but not least is some fresh grated parmesan cheese. This is just one of those classic Cesar Salad ingredients you can’t forget.

To get the crispiness with the sweet potato, croutons, or chickpeas I used an airfryer. I just put each ingredient in there separately because they cook fairly quickly. You could also roast all the ingredients in the oven so be sure to ready the recipe for options.

I love this Kale Cesar Salad as a side or a main dish. It would be delicious with some chicken on top for additional protein. If you don’t like kale, please try this salad to change your mind. Healthy Kale Cesar Salad

A cesar salad with massaged kale, crispy chickpeas, sweet potatoes, and corn bread croutons.
Prep Time 15 minutes
Cook Time 1 hour
Servings 4

Ingredients

  • 16 oz kale chopped (about 2 bunches)
  • 2 white or regular sweet potatoes
  • 1 can chickpeas
  • 1 seedless cucumber
  • 1 small avocado
  • 10-11 oz vegan cesar dressing I use trader Joes
  • 1/2 seedless cucumber

Corn Bread

  • 1 pkg cornbread prepared according to pkg instructions

Instructions

  • Prepare cornbread according to package instructions and let cool.
  • Finely chop the kale and place in a large bowl. Add the cesar dressing to the kale and massage with hands for a couple minutes until kale starts to get soft and break down. Place in the fridge.
  • Chop the sweet potatoes and place in the air fryer for about 20 minutes at 400 degrees or roast in the oven at 425 for 30-40 min flipping half way through.
  • Drain and rinse the chickpeas. Dry with a towel or paper towel to remove extra moisture. Place in the air fryer at 350 for 10-15 until crispy or roast in the oven with the sweet potatoes for about 10-20 minutes until just golden flipping half way.
  • Cut the corn bread into cubes. Place in the air fryer for about 10-15 minutes at 350 until golden and crisp. You can also place them in the oven at 350 for 10-15 minutes until golden brown.
  • Slice the avocado and cucumber into thin slices.
  • When ready to serve add sweet potatoes, chickpeas, avocado, cucumber, and cornbread croutons to the kale. Season with salt and pepper and enjoy.
