Potatoes are just a wonderful food. There are so many varieties, you can pair them with so many meals, and they can be prepared in many different ways. These healthy lemon garlic potatoes are one of the best ways to cook potatoes, because not only are they easy, but they are crispy and fresh. They make a great side dish to go along with any protein for dinner or to even make a scramble for breakfast with eggs.
My favorite potato to use for this recipe is a white sweet potato because I just love the sweet paired with savory flavors. Just like my sweet potato breakfast nachos  with all the savory toppings on top of the sweet potatoes. This recipe would also be good with russet, red, fingerling, or any potato you have in your pantry. To give these potatoes an extra crispness I first tossed them with some avocado oil. Avocado oil is such a great oil choice when cooking at high heat. Then I coated the potatoes with lemon and some fresh thyme leaves. In my opinion, these two ingredients are just a match made. The tang of the lemon compliments the earthiness of the thyme. Ofcouse I added in some fresh garlic because I feel that is essential with roasted potatoes. Finish with a little flakey salt and then all you have to do is roast the potatoes until desired crispness.
These healthy lemon garlic potatoes are make directly on a roasting pan for easy clean up. I know French fries are superior, but these are definitely a healthy and tasty option. They get nice and crisp on the outside, but soft and tender on the inside. The seasonings compliment the potatoes and just take them up a few levels. This would be a great recipe to meal prep for the week to pair with whatever you are having for breakfast, lunch, and dinner. I am partial to sweet potatoes based on taste, but all potatoes provide great nutritional benefits. So let me know what you think and what potatoes will be your favorite to make with this recipe.
