I’m about to share one of the best healthy spaghetti Alfredo recipes ever! I mean who doesn’t love fettuccine Alfredo? How can it not taste good with a pasta covered in butter and cheese. It was such a treat to get this dish when I was growing up, usually at Olive Garden. I will say my stomach never felt great after eating this meal. So of course I had a crazy idea to try and recreate a healthier version. This recipe turned out better than I had hoped. The sauce is a creamy garlicy sauce that coats the pasta just perfectly. It makes such a filling and satisfying meal. There were not any leftovers in my house hold.
This meal starts with the creamy sauce. The best part about this sauce is all you have to do is add everything to a food processor or blender. It begins with chickpeas, which I promise you can not taste. They just add a wonderful creamy flavor when blended, along with the great nutritional value. The salty cheesiness comes from the dairy free parmesan. I think the bite to parmesan is just the perfect addition to the sauce. Coconut cream is another great ingredient in this sauce. It gives the sauce a rich flavor and texture without needing the butter or oil. Finally, the juice of a large lemon is added to bring in some tang and compliment all the creamy flavors. Then for the seasonings all you need is some simple garlic, salt, and pepper. All required for delicious flavor in this sauce. Especially the garlic to really bring in the classic taste of Alfredo. I used banza pasta in this dish for some extra protein, and just because it taste just like pasta when cooked correctly. You just want to always undercook banza pasta because it will continue to cook after draining. If overcooked it becomes almost like mush and that is no good. To bring a little Italian flare to the dish, I added some chopped parsley. You could also add any other veggies in the recipe such as red pepper, mushrooms, tomatoes, or zucchini if you want to bulk the dish up a bit just like I did with my pesto pasta. Another option would be to add some chicken if you would like some additional protein.
I love that this recipe comes together in under 30 minutes! It is such a fast dinner, but also a family favorite. Win win for me when I want something quick on a week night. This healthy spaghetti alfredo is filled with amazing flavor, and just a wonderful consistency. The thick and creamy sauce is exactly what I want my pasta to be covered with.
