Sometimes their is just nothing better than a big cozy bowl of soup! Something about warm soup along with dipping bread and crackers in it just makes me happy.
This lemon and wild rice soup is cozy yet refreshing at the same time. It has a good healthy squeeze of lemon juice to make the flavors of the soup bright and fresh. This hearty meal will make a delicious lunch or dinner during the week. It is filled with so many fresh vegetables, lemon juice, and thyme to make all the flavors really stand out.
This lemon and wild rice soup starts with the wild rice. I love this recipe because the rice cooks as the soup cooks so you don’t have to make it two extra steps. Plus, wild rice has many nutritional benefits as well as making the soup very satisfying. I added carrots, onion, celery, and spinach for the fresh vegetables. Classic soup ingredients that just never disappoint. Then to flavor the soup even more is some sausage. I used a vegan ground sausage, but any ground sausage will work. I love the seasoning the sausage adds to this soup. Chickpeas are added for some additional texture and nutrition. Finally, for the flavor punch is some fresh thyme, lemon juice, and lemon zest. This really blends the all ingredients together and gives the soup a fresh punch.
Soup is just such a cozy and comforting meal. This recipe in particular feels so nourishing and delicious. I served it with a little sour cream on top and some toasted bread. Crackers would also add a good crunch to this recipe as well. This lemon and wild rice soup would be ideal to meal prep. You could double the recipe and freeze half of it for another time when you want something easy for dinner. I just love soups in general, but especially this one, and I hope you agree. It may actually be one of my new favourites to make during the cold weather seasons.
