Peanut Butter Cup Banana Bread

Peanut butter cup banana bread! Need I say more?? I think not, but I’m going to tell y’all about this indulgent bread that can also be made into muffins!

First off banana, chocolate, and peanut butter are just an unmatched combo. All three combined are indulgent enough, but then you make it into a classic banana bread and it is out of this world. You have the moist banana bread with creamy peanut butter cups throughout the batter, and then a peanut butter crumble on the top. The sweet crunchy topping is my favorite part on any baked good, so I thought why not add it to this bread. Then you get that peanut butter crunch topping with the moist bread every bite.

One of the best things about this bread is it can be made vegan and gluten free! That way anyone with a dietary preference can partake in enjoying this bread!

Ingredients

The most essential ingredient in this bread is the ripe bananas. The bananas provide moisture, sweetness, and make this bread banana bread. For the other wet ingredients you need some flax eggs. A great vegan alternative to regular eggs that allow the ingredients to bind. Then a little vegan butter and creamy peanut butter are added to round out the wet ingredients. The butter allows the peanut butter to not be overpowdering with peanut butter flavor. There is just enough peanut butter added to make the bread moist but not overwhelming with peanut flavor. Then it gives a little room in the recipe to mix in those very important peanut butter cups without feeling too indulgent.

For the dry ingredients I used some gluten free flour so it was safe for all my friends and family to enjoy. All purpose flour would also work well with this recipe.  Then I used monk fruit sweetener to keep the sugar content lower. You could also use regular cane sugar or coconut sugar. All that is left is the baking powder and soda, and ofcourse those peanut butter cups. You CAN”T forget those. They take this bread to the next level with the dark chocolate and creamy peanut butter middle. The texture they provide throughout the bread is my favorite.

Peanut Butter Cup Banana Bread

A banana bread mixed with dark chocolate peanut butter cups and topped with a peanut butter crumble.
Prep Time 15 minutes
Cook Time 1 hour
Servings 10

Equipment

  • 1 loaf pan

Ingredients

  • 2 1/2 cups gluten free flour
  • 1 cup cane sugar or monk fruit sweetener
  • 2 tbsp ground flaxseed
  • 1/4 cup softened butter
  • 1/4 cup creamy peanut butter
  • 1 tsp baking powder
  • 3 large bananas (or 4 small)
  • 1 tsp baking soda
  • 1/4 cup dairy free milk
  • pinch of salt
  • 20 dark chocolate peanut butter cups chopped

Crumble Topping

  • 1/4 cup coconut sugar or brown sugar
  • 2 tbsp melted coconut oil
  • 1/4 cup peanut butter
  • 1/3 cup rolled oats
  • 1/3 cup flour

Instructions

  • Preheat oven to 350 and grease a loaf pan.
  • In a small bowl add the ground flaxseed and 2 tbsp of water and let set for 3-5 min.
  • In a larger bowl mash the bananas until smooth. Add in the sugar, butter, peanut butter, and flax eggs. Mix till smooth.
  • Fold in baking powder, baking soda, flour, salt, and milk. Mix until well combined.
  • Chop up the peanut butter cups and fold into the batter. Then pour the batter into the loaf pan.
  • In a separate bowl mix together the crumble ingredients until well combined.
  • Sprinkle the crumble on the top of the bread and gently press down. Place the bread in the oven on the middle rack. Let cook for about 50-60 min until set. Be sure to check on the bread at 30-40 minutes to be sure the crumble is not burning. If the crumble is brown then just place a piece of aluminium foil on top of the bread. Let the bread finish cooking until set.
  • Let the bread cool for at least an hour and ready to serve.
