Time for pizookie number 2 in the pizookie series! This salted caramel pizookie is the perfect balance of salty and sweet. It is has that goey center and crisp outer edge, which is my absolute favorite! This pizookie is vegan and can be made gluten free. It has a layer of the oat dough, a thin layer of caramel, followed by the remaining dough, and a finishing drizzle of caramel. So you definitely get plenty of caramel within that oatmeal cookie.
The dough for this salted caramel pizookie starts with butter and sugar just like the monster cookie one. I used lakanto monk fruit sweetener to lower the sugar content but feel free to substitute with coconut sugar. A combination of oat flour and rolled oats are used to create the crumbly texture. I used a flax egg to keep the dough vegan friendly. My favorite parts of making cookies or a pizookie is being able to eat the cookie dough! Nothing like testing out the dough before you cook it.
The caramel drizzle that is layered in between the dough is the same caramel I used in my pecan pie bars. It is sweet, creamy, and the perfect addition to this pizookie. It starts with some maple syrup and a mix of coconut cream and oil to create a smooth texture. Then  to get the extra sweet and creamy caramel flavor I added cookie butter. If you don’t have cookie butter you can sub in some cashew or almond butter. After you place half the dough in the bottom of the cast iron skillet, then you add a layer of caramel. Top with the rest of the dough and then after you place it in the oven to bake you do a final drizzle of the caramel. To make sure you get that salty finish I topped the pizookie with some flakey sea salt. It comes out to be nice and goey, but a little crisp. If you like a firmer cookie then just allow the cookie to cool before diving in.
Like most pizookies, I love topping it with a few scoops of ice cream. I love when the salted caramel pizookie is hot and the ice cream starts to melt all over it. You could also top it with some whip cream or even just eating it on its own would be great. Pizookies are just such a ideal dessert to feed a crowd. You could double the dough and make it in a bigger cast iron skillet or you could just make it a little thicker in a small cast iron skillet. No matter how you eat it, I know you will love it.
