Get ready for some vegan banana pudding that will blow your mind. This easy recipe can be made in single servings for delicious individualized desserts. I did not grow up eating banana pudding, but I love banana, vanilla wafers, and whipped cream. There was no way I wouldn’t absolutely love banana pudding. I feel like I have been missing out for many years not having this dessert! I made this recipe for my parents and the next day they went and got more ingredients to make it the following night because they wanted it again. That does not happen often and so I know that means this recipe is a winner.
The vegan banana pudding starts with the pudding part of the recipe. I used vegan cream cheese and blended it with some coconut cream to make it a super light texture. Then I added in pudding mix, milk, a little extra sugar, and some vegan whipped cream. The addition of the banana pudding to the mixture was a game changer. It gave the pudding extra banana sweetness, while also thickening up the mixture. Then for the wafers I used Siete Mexican wedding cookies, but any wafer will work. I just loved the powder sugar coating, and I just happened to have those in my pantry. Finally you just need a few bananas and all you have to do is layer everything together.
There is just something about single serving desserts that I love. Maybe it is because I don’t have them often, but I love just being able to know that whole mason jar is mine. You could also make the vegan banana pudding in a trifle dish as well. Make sure to finish the recipe with a heavy hand of whipped topping, and however you decide to make it I can guarantee it will be to die for.
