I have the easiest fourth of July recipe for you that takes no time at all. This vegan berry crumble is festive and such a summery dessert with just a few simple ingredients. I love this dessert because you can mix up your favorite fruit or berry combinations which makes it a very versatile recipe. I try to take advantage of the fresh berries when they are in season. They are just as good as candy to me, especially cooked berries like in my berry baked oatmeal. It is my favorite when they just burst in your mouth. I really enjoy creating healthy treats to have at a gathering that I know others and I will enjoy. Â This is my own take on a crumble using sugar cookie as the topping. The mix of the sweet berries and the crunchy cookie is a match made in heaven.
This vegan berry crumble starts with the fresh berries. Like I said previously, you can use whatever berries you have on hand. I chose blueberries and strawberries for the upcoming holiday, but you could sub blackberries or raspberries. To make the fruit a little bit sweeter I added a little honey. If making vegan you can absolutely add maple syrup. My favorite part of this whole dessert is the sugar cookie topping. It gets nice and crisp on the top of the berries, but you still get the amazing sugar cookie flavor. I lightened up the sugar cookie mix by adding in the butter along with some coconut cream. Then after you bake it and it is ready to serve, my favorite topping is some ice cream. There is just nothing like a warm crumble with cold ice cream that just melts on top. You could also sub whipped cream.
This dessert is honestly ideal for any time of year because you can use any fruit that is in season. I do love the vibrant colors of the berries as well as the hint of tartness. You just can’t mess up this recipe and it makes enough to feed a decent amount of people. So if your in need of a last minute dessert, no worries because I have the perfect recipe.
