These Vegan Chai Snickerdoodle cookies might just be my new favorite cookie! It is a sugar cookie dough rolled in a homeade chai spice and sugar. The cookies have a slightly crisp outer egg and a soft middle just like a classic snickerdoodle. The chai spice adds just a little extra kick of fall. They would make an incredible gift, and will leave your house smelling like fall.
These cookies start with the sugar cookie dough. I made a vegan and gluten friendly version of sugar cookie dough so my friends and family could enjoy these cookies with me. It starts with the usual sugar cookie ingredients, and then I mix everything together in one bowl. Butter and sugar make the cookie take on a classic sugar cookie taste. Then for the soft texture, I added just a touch of cream of tarter. This helps make the cookies a little more fluffy and not so heavy. To bind the ingredients together is a flax egg. The flax egg subsitiutes perfectly for a regular egg. I used some gluten free flour, and last but not least is some good vanilla. Let the dough refrigerate to set, and then it is time to roll them into balls.
What really makes these Vegan Chai Snickerdoodles is the homeade chai spice. I love making a homeade version of chai spice because then you can use it all fall and winter long! It is filled with so many warm and fragrant spices, and the hardest part is making sure you have all the spices. Everything comes together in one bowl, and then you can use it for tea or even make it as a gift for the holidays. I mixed the spice with some sugar for compliment the warm spices.
