If you have never tried a pizookie then you are in for a treat. This pizookie in particular is a monster pizookie flavor which means it has lots of oats, peanut butter, and chocolate. It has a goey center and crisp outter edge. My favorite way is to eat it is right out of the cast iron skillet with a few scoop of ice cream, and a few friends if they are lucky.
This monster pizookie is a vegan dough, so it is egg free. That means it is extra okay to eat as much of the dough as you want. The dough starts with some vegan butter and creamy peanut butter. The peanut butter is a must in this cookie to pair with the chocolate and oats. I added lakanto monk fruit sweetener as the sugar to make it refined sugar free. Feel free to use coconut sugar or whatever you have on hand. Next up is plenty of oats. I added in a little bit of oat flour and regular rolled oats to create the perfect texture. A little vanilla is added for flavor. Then last but not least is chocolate, and plenty of it. I added in some vegan M&Ms mixed with dark chocolate chips. I love dark chocolate paired with the peanut butter and the sweet dough, but use whatever you have on hand. Then all you have to do is place the dough in your castiron skillet, assuming you don’t eat it all, and bake. Definitely my favorite to eat right out of the oven.
If you don’t have a 8 in’ cast iron skillet then you can use a little bit bigger or smaller skillet. Just know the cookie might be a little thinner or thicker, and you may have to adjust the cooking time. It would be fun to double the cookie dough and bake it in a large cast iron for a birthday party or any gathering. This will be my first of many pizookies, but we are starting off on a good note with a monster cookie. No better combo then peanut butter and chocolate in my opinion.
