Nutter Butters were always my childhood favorite cookie. I would choose nutter butters over any other snack or treat including oreos. Anything peanut butter is always my go to! I decided to make my own homeade version of these cookies, but no bake! It is still super hot in Texas, and I’m always a fan of not turning on the oven. These no bake nutter butters take on the classic shape of a original nutter butter with a peanut butter filling. If you are like me and are a cookie dough fan, then you will be a big fan of these.
These no bake nutter butters are super easy to make, and have just four simple ingredients. They start with some creamy peanut butter. The key ingredient to these no bake cookie. They not only give the cookie the peanut flavor, but also help create the smooth texture to the dough. Â To sweeten these cookies is a drizzle of honey. The honey allows the dough to bind together while also providing all the sweetness these cookies need. For the flour, I used a gluten free flour. If you are nervous to eat raw flour, you can toast the flour in the oven for 5 min. A little bit of butter is added to help give the peanut butter dough a classic cookie flavor.
The icing is also super simple. You just mix some more peanut butter, butter, and powdered sugar together. It comes out fluffy and sweet, which is just perfect to sandwich these cookies.
I am a huge nut butter fan, but peanut butter is my all time favorite! I love nothing more then peanut butter ice cream, peanut butter cups, peanut butter balls, peanut butter cookies, etc.. So these no bake nutter butter cookies are my sweet tooths dream. They are so simple to make, and I love how they remind me of my childhood. I love the no bake option, because I am a huge cookie dough fan. These cookies mix those classic nutter butter cookies, but with cookie dough.
