What is better then a peanut butter cup!? In my opinion there really isn’t much. The combination of chocolate and peanut butter just can’t be beat. I would always pick out the Reese’s when I would go trick or treating. They were always my favorite out of all the candy. Now I know there are plenty of homeade versions of Reese’s, but this one is a little different. Ofcourse I made it a little healthier and lighter with better ingredients, but this vegan peanut butter cup also has a little crunch added into the center. Once that crunchy peanut butter filling is covered in chocolate and topped with a little sea salt, you will never want to go back to the regular Reese’s peanut butter cup.
This vegan peanut butter cup starts with the peanut butter filling, and trust me when I say there is no lack of peanut butter flavor. The best part is all you have to do is pulse everything in a food process. It starts with some puffed rice. The puffed rice is what give the little crunch that adds great texture in this recipe. Then to make it a little lighter I added some creamy peanut butter mixed with some powder peanut butter. To help combine everything together I added some coconut cream instead of oil. It is a light texture without any coconut flavor, but is perfect to just bring everything together. Next up is the chocolate. I used dark chocolate in this recipe because that is my favorite, but feel free to use what ever you have or your favorite chocolate. After you layer everything together I highly recommend a sprinkle of salt. It really does bring out the sweetness of the chocolate. The hardest part is letting the chocolate set before you eat.
The vegan peanut butter cups are just the perfect sweet treat as a snack or after dinner dessert. They are not to heavy or sweet, and are just enough to curb a sweet tooth. I much prefer these homeade peanut butter cups to regular because they not only are better for you, but that little crunch in texture adds such a fun touch to this dessert. I’m so happy with this recreation of the classic Reese’s and I hope you give them a try and think the same.
