Street Corn Dip is a new to me dip this summer, and I can’t believe I have been missing out all this time. The sweetness of the roasted corn combined with a little spice and tang from the dressing makes for a mouth full of flavor. I have discovered all kinds of ways to serve up this dip because it is such a easy dish to throw together. I make a vegan version so that my family can enjoy and you would never know the difference. So not only is it simple, but it can also be made a little healthier. Lets talk about the ingredients in this dip.
First up is some corn. You can use fresh corn in the summer, but if it is not summertime I use frozen corn. You don’t have to roast the corn, but I HIGHLY recommend to get that toasty sweetness that is so delicious with all the other ingredients. Next up is some diced tomatoes and green chilies. I love using this compared to fresh tomatoes because it is convenient and adds a lot of flavor. My favorite herb to add to this recipe is cilantro, and lots of it! The next very important ingredient is some parmesan cheese. Cojita cheese could also be another alternative, but I like the salty bite of parmesan.
For the dressing you need plenty of fresh lime juice. This balances out the sweetness from the corn. Then I added a mix of cream cheese and mayo for a balance of creaminess. Finally, all you need are a few essential spices for the classic street corn flavor. The dressing comes together in the blender, and all that is left is to stir everything together.
Now time to talk about ways to serve this dish up. Ofcourse you can just keep it simple with some chips. That never fails to bring to a gathering. I also love making some tacos out of it. I stuff a corn tortilla with some pinto beans, chicken, avocado, and the street corn dip. The third option is a pasta salad. I added some chickpea pasta in a bowl with chicken, the street corn dip, and I made a little extra dressing to coat the pasta. Last but not least is some street corn nachos, which just happen to be my favorite. I loaded up some chips with queso, pinto beans, avocado, and the street corn dip. You could also add some chicken to make this a fully loaded meal.
The nachos are my favorite variety for many reason , but one is because I love just being able to eat off the pan. Secondly, they make for an easy sheet pan meal that you can add or take away anything you don’t like. And third, it is a football season. This makes for a easy and delicious football snack or appetizer.
Street corn dip has been around for a long time, and known as many different names. One I recently heard was corn in a cup.
