Lemon Garlic Potatoes

A roasted potato recipe with lemon, garlic and thyme

Ingredients

  • 3 large white sweet potatoes or any potato of your choice
  • 1 large lemon
  • 1 1/2 tbsp fresh thyme
  • 1 tbsp garlic
  • avocado oil spray
  • 1-1 1/2 tsp flakey sea salt

Instructions

  • Preheat oven to 400 and line a large roasting pan with parchment paper
  • Dice up the potatoes into cubes and place on the roasting pan
  • Spray with enough avocado oil to coat the potatoes
  • Add the juice of the large lemon, the garlic, salt, and thyme leaves to the potatoes
  • Mix so everything is coated and mixed together and then place in the oven
  • Roast for 30 minutes at 400 degrees and then stir. Then up the oven temp to 450 and roast for an additional 15-30 minutes depending on how crispy you want the potatoes. Make sure you mix them after 15 additional minutes is up
  • Add additional sea salt and lemon zest for serving if desired.
