Vegan Berry Crumble

A healthy crumble with strawberries and blueberries and topped with sugar cookie

Ingredients

  • 2 cups sugar cookie mix
  • 2 lbs strawberries
  • 1 pint blueberries
  • 2 tbsp coconut cream
  • 2 tbsp vegan butter
  • 2 tbsp honey or maple syrup
  • optional to serve with ice cream

Instructions

  • Preheat the oven to 350 and grease a 9x13 dish
  • Slice strawberries and place in a large bowl. Toss in blueberries and then add the honey. Gently stir to combine and then add to the bottom of the dish
  • In a medium bowl add sugar cookie mix, coconut cream, and butter. Mix with a fork until it comes together. It still may be a little dry
  • Add the sugar cookie to the top of the berries in a even layer and place in the oven
  • After 30 minutes up oven temp to 375 so the cookie gets crisp. Cook for another 8 minutes or until the cookie is golden brown.
  • You can serve this hot, although it will be messy, or let set in the fridge. Cut into slices and serve cold or heated up with whipped, topping or ice cream.
