Cookie Butter Granola
A crisp granola with all the flavors of cookie butter

- 2 cups rolled oats
- 2 cups puffed rice or rice crisp
- 2 cups puffed millet or extra puffed rice
- 9 sheets graham crackers
- 1 tbsp cinnamon
- 1/2 cup melted coconut oil
- 1/3 cup cookie butter
- 1/2 cup maple syrup
Preheat oven to 350 degrees and line 2 large roasting pans with parchment paper.
Combine the dry ingredients in a large bowl and set aside.
Combine the wet ingredients in a separate bowl and mix till smooth.
Add the wet ingredients into the dry ingredients and mix until everything is evenly coated
Spread half the granola on each roasting pan and place in the oven
Bake for 20-25 minutes until golden brown and then let cool completely
Break into chunks and serve.
Store in fridge for extra crispness
