Hot Honey BBQ Chicken Sandwich

A crispy chicken sandwich served in a toasted bun and topped with a drizzle of hot honey

Equipment

  • 1 large cast iron skillet

Ingredients

  • 1 bag kettle cooked BBQ chips (I love Siete)
  • 1 lb chicken breast
  • 4 sandwich buns
  • 3 eggs
  • 2 tomatoes
  • lettuce for serving
  • hot honey
  • avocado oil spray or other oil

Instructions

  • Place cast iron skillet on medium high heat and coat with avocado oil spray. Preheat oven to 350 degrees.
  • In a medium bowl beat eggs until smooth. Add chips to blender or food processor and blend until you have fine crumbs. Place the chips in a separate bowl.
  • Coat chicken in egg wash and then place in the chip coating and cover in the crumbs.
  • Repeat with each chicken breast and add to the hot cast iron skillet. Allow the chicken to sear for about 2-3 minutes on each side until outside layer of chicken is golden brown and crisp.
  • Place the chicken in the oven and cook for about 15 minutes depending on how thick chicken. Once it is completely cooked through remove from oven.
  • While chicken cooks, toast the buns on the stove or in the oven, and wash lettuce and tomato. Slice tomato in thin slices
  • Once chicken is done cooking, layer the chicken, lettuce, and tomato on the bun. Generously top each sandwich with hot honey and serve.
