Place cast iron skillet on medium high heat and coat with avocado oil spray. Preheat oven to 350 degrees.
In a medium bowl beat eggs until smooth. Add chips to blender or food processor and blend until you have fine crumbs. Place the chips in a separate bowl.
Coat chicken in egg wash and then place in the chip coating and cover in the crumbs.
Repeat with each chicken breast and add to the hot cast iron skillet. Allow the chicken to sear for about 2-3 minutes on each side until outside layer of chicken is golden brown and crisp.
Place the chicken in the oven and cook for about 15 minutes depending on how thick chicken. Once it is completely cooked through remove from oven.
While chicken cooks, toast the buns on the stove or in the oven, and wash lettuce and tomato. Slice tomato in thin slices
Once chicken is done cooking, layer the chicken, lettuce, and tomato on the bun. Generously top each sandwich with hot honey and serve.
