Vegan Street Corn Dip
A super easy and classic street corn dip with vegan friendly ingredients
Prep Time 15 minutes minutes Cook Time 30 minutes minutes
- 4 cups roasted corn frozen or fresh roasted
- 1/2 cup red onion chopped
- 1 10 oz can diced tomatoes and green chilies
- 1 cup vegan grated parmesan
- 1 bunch cilantro (chopped)
Dressing
- 3 tbsp vegan cream cheese
- 2 tbsp vegan mayo
- 1/4 tsp cumin
- 1/4 tsp chili powder
- 1 clove garlic
- 4 tbsp lime juice
- 1/3 tsp salt
Add all the dressing ingredients in a blender or food processor and blend till smooth.
In a large bowl add all the dip ingredients and mix to combine.
Add the dressing and mix till everything is evenly coated.
Add extra parmesan and cilantro for topping and enjoy.
Serve on nachos, eat with chips, serve on tacos, etc.
