Vegan Street Corn Dip

A super easy and classic street corn dip with vegan friendly ingredients

Ingredients

  • 4 cups roasted corn frozen or fresh roasted
  • 1/2 cup red onion chopped
  • 1 10 oz can diced tomatoes and green chilies
  • 1 cup vegan grated parmesan
  • 1 bunch cilantro (chopped)

Dressing

  • 3 tbsp vegan cream cheese
  • 2 tbsp vegan mayo
  • 1/4 tsp cumin
  • 1/4 tsp chili powder
  • 1 clove garlic
  • 4 tbsp lime juice
  • 1/3 tsp salt

Instructions

  • Add all the dressing ingredients in a blender or food processor and blend till smooth.
  • In a large bowl add all the dip ingredients and mix to combine.
  • Add the dressing and mix till everything is evenly coated.
  • Add extra parmesan and cilantro for topping and enjoy.
  • Serve on nachos, eat with chips, serve on tacos, etc.
