Preheat oven to 400 degree and grease a muffin pan with non stick spray.
In a large bowl, add the wet ingredients and beat with a hand mixer until evenly combined.
Fold in the dry ingredients. Mix till batter is smooth
Scoop the batter about 3/4 of the way full in each muffin tin.
Place in the oven for 8 min. Then decrease the temperature to 350 degrees and bake for another 8-10 minutes.
Remove from oven once muffins are golden and set.
Let cool for about 10 minutes, remove from muffin pan, and dust with powdered sugar if desired.
Keep in a air tight container at room temperature for 3-5 days.
