Cauliflower has been a magical ingredient for the past few years. I have to be honest, I wasn’t a huge cauliflower fan when I was younger. I was a picky kid, and I could not stand the taste and texture. But now, I have started to enjoy it in the last few years. This baked crispy cauliflower is one of my favorite ways to eat this vegetable. It is crisp, only three ingredients, and makes the perfect appetizer to use to dip in any sauce.
Ingredients
To make these vegan friendly, I used a flax egg to coat the cauliflower first. You could sub regular eggs if you don’t need them to be vegan. Then, to give these cauliflower bites a crisp coating, I used crumbled salty tortilla chips. I partial to Siete not only because they are a local company, but the ingredients in there products are on point. Not to mention, they are absolutely delicious. You could even change up the flavor of the chips, and coat the cauliflower in BBQ chips or really any flavor that sounds good. I then served the cauliflower with some creamy garlic cashew sauce. You could also have a variety of sauces such as BBQ, honey mustard, ranch, guacamole, etc.. These cauliflower bites are super versatile to make according to your liking.
This recipe makes such a great appetizer for any occasion any time of year. My favorite thing to do is just make a bunch of snacks/appetizers and have them as a meal. These crispy cauliflower bites are healthier than any deep fried snacks, but absolutely delicious. If you are craving a salty snack be sure to give these a try.
