Preheat the oven to 400 and line a large roasting pan with parchment paper
In a medium size bowl combine the ground flaxseed with 6 tbsp of water and let set until gelled (3-5 minutes)
In a food processor, add the bag of chips and pulse until fine crumbs. Then pour into large bowl
Cut the cauliflower into bite sized florets.
Dip the cauliflower in the flaxegg, the coat the cauliflower in the chip crumbs, and place on the roasting pan.
Repeat until all the cauliflower is coated.
Place in the oven and roast for 35-45 minutes flipping after 25 minutes. The cauliflower should be golden brown. Serve right away with desired dressing.
