Cauliflower rice has been a popular ingredient for healthy cooking these days. I have to say I was not a huge fan of it in the beginning, but now learning how to cook it and add flavor, I always keep some in my freezer for easy meals. This easy cauliflower rice stir fry is what I meal prepped all week for lunches and it is a nourishing meal filled with lots of flavor. It is super easy to prepare for dinner or lunch for the week ahead. The sauce is just three ingredients to give the dish a delicious finish.
This cauliflower rice stir fry starts with the base of frozen cauliflower. Hanovers has a delicious cauliflower stir fry as well as trader joes, to keep the dish simple. I know there are many other brands to try as well, but those two I have tested and love. The veggies I roasted in this dish are snap peas, brussel sprouts, edamame, and broccoli. All classic veggies in a traditional stir fry recipe. Any color peppers would also be a delicious addition. Once the veggies are roasted, then all you have to do is saute up the cauliflower rice. I like to saute until the rice is nice and brown and toasted. Thats when I think the rice gets all the flavor. For the meat, I used a plant based korean BBQ by urban accents culinary. It is made with great ingredients and took about 5 minutes to throw together. You could also add in chicken, tofu, tempeh, or ground turkey for additional protein if you don’t want to use the meat substitute. I didn’t add any cashews, or water chestnuts (which I had and forgot) but both would be delicious in this dish.
The honey garlic sauce could not be any easier. I took equal part coconut aminos or soy sauce and honey and stirred that together. Then I added some prepped mashed roasted garlic and that was it. It was a perfectly balanced sweet salty dressing to compliment the cauliflower rice stir fry.
I made a big enough serving of this cauliflower rice to last for the week at work. It has so many different textures, and flavors to make a satisfying meal. I love being able to get in lots of vegetables in my meals, and this made it so easy. If you are craving a nourshing Asian inspired meal then give this a try.
