It is CoKoCooks Birthday and what better way to celebrate then finally telling y’all how to make these cookie pizza. You can make them big to feed a crowd or you can make individuals. Either way you can have a little piece of each flavor or you can choose what kind of cookie you want with the bigger one. These are definitely not healthiest cookies in the entire world, but life is all about balance and celebration and I took a little short cut to make this easy dessert.

I had quite a bit of leftover betty crocker cookie mix from making my cookie baked oatmeal, and I just happened to have a friends birthday come up. I thought it would be a great idea to make a cookie pizza. Let me just tell you that this was a hit for friends and coworkers. Both of the big cookie pizza and the individual ones were equally amazing. Now there are options for making these cookies so this blog post will consist of taking you through those options.

For the Big Cookie Pizza

To begin you want to choose 6 Betty Crocker cookie mixes of your choice or any other brand as long as your willing to do a little math. I highly recommend using a food scale if you do not want to make all of the 6 flavor doughs. If you don’t have a food scale then just make each batter and then we can take the sections out to use for the cookie and you can freeze the rest for cooking later.

Now if you want to use a different cookie mix then Betty Crocker you just want to make sure each of the 6 slices equals one whole box of the cookie mix. For example if there are 18 servings in one box of cookie mix then you will take the grams per serving size and times that by 18. So 1 serving = 28 grams and there are 18 servings then the whole bag will have about 504 grams. You would divide the 504 grams by 6 because we are choosing 6 cookie flavors. So you would use about 84 grams of each mix.

For the wet ingredients, since you are making the same amount of dough as 1 box then we will just follow the box instructions. So for the Betty Crocker mixes I used 1 egg, 2 tbsp water, and 1/3 cup oil. I zeroed out a food scale with a bowl on it and added all the wet ingredients. The measurement came to 144grams. I will divide that number by 6 since we have 6 different batters. Each dough will have about 24 grams of wet ingredients mixed in.

Now it is time to make the dough. On my food scale I added a bowl and zeroed it out. Then you add your grams of the mix you came up with, so this example would be 84 grams of one mix. Then I zero out the scale again and add my 24 grams of wet ingredients. Mix it together and that is dough number 1. Repeat this process for the next 5 dough balls. I will say that if using the Betty Crocker mixes then the peanut butter cookie mix needs about 30 extra grams of dry mix because it is a wetter dough. Just be sure which ever cookie mix you use to be sure each dough will use the same amount of wet ingredients. I only know for the Betty Crocker since this is the only batter I worked with.

Now all that is left to do for this cookie pizza is to get a pizza stone and shape each dough into a triangle and bake. The picture below is what the cookie looks like before going into the oven.

If you decide to just make each bag or box of dough because you don’t have a food scale, then you can just eyeball and pull out a 6th of each dough. Then it would be the same process of shaping the dough into triangles and baking.

Now lets talk about the individual cookies

You want to start the same way we did for the big cookie and get each batter made. You don’t necessarily need 1/6th of each mix. This just depends on how many cookies you want to make. About 1/6th of each dough makes about 16 cookies. After you have your dough made we have a few options on how to make these cookies.

First you can just measure about 1 tbsp of each dough out and roll it into balls. You place each ball on a cookie sheet next the eachother and lightly press down so all the dough balls come together. This is the easiest way in my opinion. The picture below show the unbaked cookie.

Another option is rolling out each dough in a snake shape till it is about 1×1 inches. Place each snake lined up together on parchment paper and then roll the doughs together as if you were rolling cinnamon rolls so they stack on each other and make a circle. Then cut the cookies about 1 1/2 in. wide dental floss and place it on a cookie sheet to bake.

You just can’t go wrong with whatever cookie pizza you decide because they are just so fun and so delicious. I feel like everytime I try to choose which cookie flavor is my favorite and my answer always changes. This is just such a fun way to have all the cookies flavors combined into one dessert. Cookie Pizza

A cookie pizza that allows you to have all your favorite cookie flavors in one.

  • For the cookie pizza preheat the oven to 375.
  • Make each mix according to instructions OR
  • Combine the egg, water, and oil on a food scale and divide that number by 6.
  • Put a bowl on the food scale, zero the scale out, and weigh out 84 grams of cookie mix. Add in the wet ingredients. Should be about 24 grams.
  • Mix each dough and place each dough in plastic wrap and let harden in the fridge
  • After a couple hours take each dough and shape them into triangles on a pizza stone. Each dough will be about 1/4- 1/2 in. thick.
  • Cookie for about 15-22 minutes depending on how well done you want the cookie. Remove from the oven and let cookie set to cut or serve hot.
  • FOR THE INDIVIDUAL COOKIES
  • Prepare each dough the same way for the big cookie
  • Option 1: Roll about tbsp size balls of each cookie and place each ball next to each other to make a circle on the cookie sheet. Slightly press down so the circles come together
  • Option 2: Roll each dough into a long log (snake style) until it is about 1x1". Place each long roll next in a line next to each other on parchment paper.
  • Roll the parchment paper up like you would for cinnamon rolls to stack the rolls on top of each other and create a long log.
  • Take some dental floss and place it under the log every 1 1/2 to 2 in. and then cross each side of the dental floss and pull to make a nice straight cut. Place each slice on a baking sheet
  • Be sure each cookie has a good amount of space to spread. I would say at least 2-3 in.
  • Bake the cookies for about 13 minutes or until they are slighly golden but still soft in the middle.
  • Store in an airtight container for 3-5 days
