Creamy Vegan Chocolate Ice Cream
This creamy vegan chocolate ice cream is one of my favorite desserts! Ice cream in general is without a doubt my absolute favorite dessert and has been since I was little. When I was younger I would choose ice cream over everything or better yet frozen yogurt. I remember my mom letting my sister and I have a Dairy Queen blizzard for dinner one night and I thought it was the best night ever! I love the softer texture and all the toppings. I also love the variety of flavors and endless options you have of ice cream. I was never a fruit or sorbet fan of the dessert, but I can’t wait to come up with more flavors.

Ingredients

This ice cream is super simple and can be made right in a food processor or blender. It gets its creamy texture from the cashew or nut butter. If you want a lower fat option you can replace half the nut butter with chickpeas. I know this can sound super weird to go in ice cream but you can not taste them at all! They just add a little nutrition and to the smooth texture of the ice cream without adding tons of fats. If this is the option you choose I recommend using an ice cream churner for a smoother consistency or just make sure you blend the ice cream before serving. To keep this ice cream dairy free I used almond milk mixed with a light creamer. I found Mooala vanilla creamer at the grocery store and loved how light it was, but it has a thicker texture from the coconut cream. The ice cream gets its chocolate flavor from the pudding mix and just a couple tablespoons of cocoa powder. Only a half a cup of sweetener is needed for this recipe thanks to the pudding mix.
This dessert is so easy because you just throw everything in the food processor and then you either just let it churn, serve straight from the freezer, or  blend it up after freezing for a super creamy texture. I prefer the consistency of ice cream more like soft serve, but you can definitely let it freeze for longer.

Now ice cream is all about the toppings and so for this recipe I just went with simple white chocolate. I love the crunch the frozen chocolate gives in addition to the soft ice cream. You could also top it with nut butter, nuts, sprinkles, anything that you enjoy with chocolate. Now that the warmer weather is coming it is officially ice cream season and I hope this is a simple recipe to throw together to enjoy throughout the seasons. Vegan Chocolate Ice Cream

Instructions

  • Combine everything in a food processor except for white chocolate or chocolate and mix until smooth.
  • If you have an ice cream maker mix in the white chocolate after you pour the mixture into the ice cream maker and use according to instructions. Or you can pour in a loaf tin, stir in white chocolate chips, cover with plastic wrap, and place in the freezer. (Recommended to stir every 30-45 minutes until frozen)
  • Once frozen after 3-4 hours or until desired consistency take out of the freezer and let soften until soft enough to scoop. If you want a super creamy texture put in the blender and blend till smooth (especailly if you used chickpeas)
  • Place leftovers in the freezer in an air tight container with plastic wrap on the top.

Notes

optional: Instead of a full cup of cashew/almond butter with pureed chickpeas for lower fat. You can not taste them, but if using this method a ice cream maker is best. If using the freezer then recommended to freeze on a larger roasting pan lined with parchment paper and once frozen you can break in chunks, and blend with a little extra milk till creamy.
