It has been an extremely hot summer here in Texas. With so many triple digit days, I have been craving all the no bake meals. The last thing I want to do is stand over a hot stove or eat a hot meal. This peach salad uses so many summertime ingredients, it is refreshing, and it is super simple! If you are struggling with the heat or craving a fresh salad, then this is a must try!
This summertime salad starts with the inspiration ingredient for this recipe which are the peaches. Their are few things I enjoy more then ripe peaches so whenever they are in season I try to use them as much as possible. To compliment those peaches are a few roasted sweet potato slices and avocado. The sweet potato is a good hearty ingredient that also provide a little sweetness. The avocado is buttery and creamy which balances out the peaches sweetness. The next star ingredient of this salad is the buratta. It wasn’t until recently that I tried burrata, and I should have known that I would fall in love with it because I am such a huge fan of mozzarella cheese. It is a mild and creamy cheese that just blends with all the other ingredients so well. And to round out the last of the main ingredients you always need a little crunch in salads. For this one I added in some slivered almonds. You can use any nut you have on hand.
To freshen up the salad even more is some fresh herbs. Basil is one of my favorite herbs to go with fruit. It balances the sweet and savory flavors. Next up is some green onions. These are perfect if you want some onion flavor, but just not a super strong onion taste. To finish the salad off is a lemon vinagrette. The fresh lemon combined with a little olive oil, tamari, garlic, and honey is all you need to combine all the ingredients together.
Creating seasonal salads always makes me appreciate the fresh produce. This peach salad combines so many fresh ingredients of summer, is filled with beautiful colors, and makes for a mouthful full of bright flavors. It is nourishing side dish or main meal. It would be delicious to add some grilled chicken on top for some additional protein if you want to make this salad a main meal. This is a must try salad before the summer ends. A fresh peach salad with avocado, sweet potatoes, basil, burrata, and almonds topped with a lemon vinaigrette.

Ingredients
2large peaches
1largeavocado
1largesweet potato
2tbspgreen onions chopped
1/4cupfresh basil leaves
1/2cupslivered almonds
8ozburatta
7ozbaby arugula
Lemon Vinaigrette
1/4cuplemon juice
1/4cupolive oil
1clove chopped garlic
2tsptamari
1-2tbsphoneydepending on how sweet you want it
Instructions
Preheat oven to 400 and line a roasting pan with parchment paper.
Slice sweet potato into half moon shapes and place on roasting pan. Roast for 20-30 minutes until golden brown. Let cool completely before adding to salad.
Slice peaches, avocado, and chop green onions.
Place arugula in a large bowl and add peaches, sweet potatoes, avocado, basil, green onions, and almonds.
In a small bowl or dressing container mix all the dressing ingredients till evenly combined.
Add burrata and dressing when ready to serve.
Will keep for up to two days in the fridge.
