Peach Salad with Lemon Vinaigrette

A fresh peach salad with avocado, sweet potatoes, basil, burrata, and almonds topped with a lemon vinaigrette.

Ingredients

  • 2 large peaches
  • 1 large avocado
  • 1 large sweet potato
  • 2 tbsp green onions chopped
  • 1/4 cup fresh basil leaves
  • 1/2 cup slivered almonds
  • 8 oz buratta
  • 7 oz baby arugula

Lemon Vinaigrette

  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 clove chopped garlic
  • 2 tsp tamari
  • 1-2 tbsp honey depending on how sweet you want it

Instructions

  • Preheat oven to 400 and line a roasting pan with parchment paper.
  • Slice sweet potato into half moon shapes and place on roasting pan. Roast for 20-30 minutes until golden brown. Let cool completely before adding to salad.
  • Slice peaches, avocado, and chop green onions.
  • Place arugula in a large bowl and add peaches, sweet potatoes, avocado, basil, green onions, and almonds.
  • In a small bowl or dressing container mix all the dressing ingredients till evenly combined.
  • Add burrata and dressing when ready to serve.
  • Will keep for up to two days in the fridge.
