Gluten Free Chocolate Donuts

I have recently been into trying gluten free treats thanks to one of my best friends having celiac disease. I have been on a mission to recreate some of our favorite gluten free treats including these chocolate donuts. Gluten free donuts are actually pretty hard to find in Austin suprisingly. I think I searched online for at least an hour to find the best gluten free donuts and there honestly weren’t many places. The little super market that we did end up at sure did have some delicious gluten free chocolate donuts. Enough to inspire me to make a recipe of my own.

When I was little, we use to go to church and it was a special treat if my sisters and I got a donut. I would always choose the regular donut with chocolate frosting. Chocolate frosting is always a winner in my book, but I have never had a chocolate donut with chocolate icing till recently. While I usually love a plain donut, the more chocolate the better! No matter what the donut is, I always get that nostalgic feeling from being younger and getting donuts. I am so happy now I am able to make my own donuts with the cutest little pan. Plus, I can make them a little healthier so there is not sugar rush like with regular donuts.  So this is the first of many donut recipes coming, but what better way than to start day than with all chocolate.

Ingredients

This gluten free chocolate donut has a light cake like texture. It starts with a base of gluten free flour. To give it that delicious chocolate taste, I added in dark chocolate cocoa powder. Then to really make that chocolate flavor stand out, a pinch of nutmeg is added. This makes the donuts taste more bakery like. I sweetened it up with a little monk fruit sweetener or coconut sugar would also work. I was able to make this recipe successfully without butter or oil in the cake. I used unsweetened applesauce to moisten the batter, as well as a little dairy free milk. After the batter is mixed, it becomes a nice smooth texture. All you have to do is place them in your donut pans. You can make big donuts, mini donuts, or you can even make them into muffins if you don’t have a donut pan.

Now for the icing which is always my favorite part. This icing is super simple, smooth, and not overly sweet.  It is just sweet enough to compliment the donut. It starts with some dark chocolate chips. To that I added a little honey to sweeten it up and to create more of the smooth icing consistency. Last is a little butter or coconut oil to make the chocolate nice and shiny. This recipe ensures a smooth, sweet, and creamy icing.

These chocolate donuts are just absolutely perfect for when you are craving a little chocolate for breakfast. They are not fried and won’t leave you feeling that sugar high after eating them. I love making the mini donuts because it makes them just a little more fun, but feel free to make them big or into muffins. I ordered the mini muffin pans on amazon. I think that starting your day off with a little chocolate just makes for a great start to the day.  So if you are a donut fan be sure to give these gluten free chocolate donuts a try! Gluten Free Chocolate Donuts

These lighten up cake donuts have a moist chocolatey based topped with a smooth chocolate icing.
Prep Time 10 minutes
Cook Time 12 minutes
Servings 24 mini donuts
Calories 67kcal

Equipment

  • 2 mini donut pan or you can make large donuts

Ingredients

  • 1 cup gluten free flour
  • 1 egg
  • 1/3 cup cocoa powder
  • 1/2 cup coconut sugar or monk fruit sweetener
  • 1/2 cup diary free milk
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla
  • 1/2 cup unsweetened applesauce

Icing

  • 1/2 cup dark chocolate chips
  • 2 tbsp honey
  • 2 tbsp butter or coconut oil
  • 2 tbsp water
  • spinkles for topping optional

Instructions

  • Preheat oven to 350 degrees and grease donut tins.
  • In a large bowl add dry ingredients and mix to combine.
  • In a separate bowl add wet ingredients and mix to combine.
  • Fold wet ingredients into dry and stir till smooth.
  • Place the batter in a large piping bag or ziplock bag, and cut off a small corner of the bag.
  • Pipe into donuts pans until almost full, but not overflowing.
  • Place in the oven to bake until just set, about 10-12 minutes.
  • After donuts are done baking, add all the icing ingredients to microwave safe bowl.
  • Microwave in small increments of about 20-30 seconds and stir. Repeat till smooth.
  • Once donuts are cooled, take each donut and dip in the icing, and then add optional sprinkles. Then ready to serve.
  • Keep in an airtight container for up to 3 days.
