Healthy Cake Batter Granola
How can you go wrong with cake batter anything!? It is one of the flavors that just never gets old. Cake batter anything is always my favorite, but maybe that is just my opinion. So I have created a healthy cake batter granola with a pretty big serving size.  Trust me when I say this stuff is addicting!  I thought making a granola cake batter flavor would just be the perfect addition to smoothies, yogurt bowls, or even as a little sweet snack. The best part about this granola is it is not filled with a ton of sugar and it is super light and crispy.

Ingredients

This recipe has a similar base to the healthy cookies and cream granola I made recently.  The recipe starts with the oats and puffed grains. I loved using puffed rice and puffed millet for the crunchy crisp texture. You could also sub any variety of nuts if you want a more nutty granola. This healthy granola has a protein boost thanks to the addition of a vanilla protein. The dry ingredients are finished off with simple mills cake mix. Simple mills has been a long time favorite brand because it not only taste incredible, but it is made with clean ingredients. For the wet ingredients I used cashew butter as a neutral nut butter but still able to add a healthy fat. Maple syrup is then added to sweeten the granola. The maple flavor is very subtle and doesn’t overtake the cake batter flavor. Then some coconut oil because that is really what helps the granola get nice and crispy. To top it all off you of course have to have sprinkles cause it just doesn’t look or feel like cake batter unless there are LOTS of sprinkles.

This is definitely one of my top favorite snacks for when I have a sweet tooth. It is crunchy, not overwhelmingly sweet, and the cake batter flavor is just always a win for me. I love making a big batch and just keeping it in the freezer to have around for when I make a yogurt bowl, smoothie, or even put some on top of ice cream. This recipe can be such a good pairing with so many things. I hope when you give healthy cake batter granola a try and  it will be everything you thought it would be with the amazing cake batter twist!

Healthy Cake Batter Granola

Cook Time 25 minutes

Ingredients

Instructions

  • Preheat the oven to 325 and line 1-2 large roasting pan with parchment paper
  • In a large bowl combine the dry ingredients
  • In a smaller bowl whisk together all the wet ingredients until smooth
  • Add wet ingredients into the dry ingredients and stir to combine. Make sure everything is coated ( I use my hands to make sure everything is coated)
  • Spread on one roasting pan if you like it crisp on the outside and softer on the insider or 2 roasting pans for crisper texture. Top with sprinkles
  • Bake about 25 minutes until golden brown. May need a little longer if you just used one pan
  • Let cool completely and then break up into pieces. Store in freezer for optimum crispness!
