I have been on a roll with granola recipes lately so why stop now! Especially with summer coming, I just had to include this s’mores granola variation in my collection. S’mores is without a doubt one of my favorite summer time desserts. I am always making my s’more bars for my family, and now this is just another s’mores addition to add in the line up. You just can’t go wrong with a crisp graham cracker, melty chocolate, and a toasty marshmallow. I was able to combine all of these wonderful flavors into a crisp granola. Delicious as a snack or with breakfast, it just hits the spot every time. Plus I’m always up for anything sweet and chocolatey.
I kept the recipe simple and started with the same base as my cinnamon roll and cake batter granola. It starts with rolled oats and puffed rice to keep it airy and crisp. Then for the graham cracker flavors, I used honey graham cereal. It is such a great addition for plenty of the graham flavor, while also adding crunch and sweetness. Cocoa nibs, as well as dark chocolate chips are added for the chocolate flavor. The cocoa nibs have a slight bitterness, while also having a chocolate flavor, to balance out the sweet. Then of course I just had to add some dark chocolate chips just like in any classic s’more recipe. For the wet ingredients I used some maple syrup for additional sweetness. Coconut oil ensures the granola binds together and creates those classic granola clusters. Cashew butter is the last addition to provide some creaminess to the mixture. Then after the S’mores Granola bakes I added some marshmallows and baked them until toasty to finish the recipe.
I am typically a sweet breakfast fan and so this is right up my alley. This is yet another recipe with a variety of ways to serve it. I usually tend to serve it with some yogurt for extra protein. You could also serve it over a smoothie, eat it plain with some dairy free milk, or with some fruit. My favorite part of the whole recipe is the toasty marshmallows. You will never believe that this recipe is healthier, and lower in sugar than store bought granola. So if you are looking for a way to spice up you breakfast menu, definitely try this recipe out.
