It is officially time to kick off the fall season on the blog. This recipe is one of many pumpkin recipes to come, but I love it so much. It is a pumpkin french toast bake with plenty of pumpkin flavor. This pumpkin French toast bake is a great way to kick off the pumpkin season, and will leave your house smelling so good. I am a huge french toast lover, especially on the weekends, but I don’t love sitting over the stove for longe periods of time. This pumpkin french toast bake makes it easy because you just combine a pumpkin custard with some bread and bake. I topped mine with cream cheese and a drizzle of maple syrup to complete my pumpkin pie inspired breakfast. It makes for a sweet and satisfying breakfast all fall long.
This pumpkin french toast bake starts with the bread. I used a honey wheat bread because I had a loaf in the freezer. You could use a french loaf or sourdough would also be delicious. You want to use some stale bread so that the bread soaks up all the flavor. For the custard you need plenty of eggs so the french toast binds. Then I added some pumpkin puree and pumpkin pie spice for plenty of pumpkin flare. Maple syrup adds just enough sweetness to the custard. Then I used some dairy free milk to make the custard nice and creamy.
For the toppings, I dolloped some cream cheese on the warm French toast. I love how the cream cheese balances out the sweetness. I also topped it with some pumpkin spice granola for a little crunch. You can also add pecans, walnuts, or pumpkin seeds. Then I always finish it off with a drizzle of maple syrup. Anything french toast must be served with maple syrup!
This makes a great weekend breakfast for friends or family. Plus, you can have the leftovers for the week. If you love all things pumpkin and breakfast, then this is a must make for the fall.
