Fall is my absolute favorite times of year! I love the weather, the fall candles, all the squashes, and pumpkin spice everything. I am working on building up some more pumpkin spice recipes on my blog, and I thought we would start with pumpkin spice granola. Now I have no shortage of granola recipes on my blog, and this one is definitely my favorite. It is probably at the top along with my cake batter granola. It is super easy, has plenty of crunch, and makes for a great breakfast or snack.
This pumpkin spice granola starts with my same usual base of oats, puffed rice, and puffed millet. To this I added some cinnamon, pumpkin pie spice, and allspice for the warm fall flavor. Then to get a good pumpkin flavor I added simple mills pumpkin bread and muffin mix. It was such a delicious and easy addition for the added pumpkin flavor. For the wet ingredients I have some cashew butter for a neutral nuttiness. Then maple syrup is the perfect sweet pairing with the pumpkin flavors. To make it crunchy coconut oil is the last wet ingredient that allows the granola to solidify.
I love just taking handfuls of this granola out of the freezer when I want a festive snack. It ofcourse is a great addition to yogurt bowls, on top of oats, toast, or just with a little almond milk. When I eat this granola it just taste like fall, and with fall being my favorite season it just automatically puts me in a good mood.
