Sweet Potato Breakfast Nachos

One of my favorite meals are sweet potato nachos. I love the slight sweetness you get from the potatoes with all the delicious toppings. I made these for myself one night and thought I could really eat these for every single meal. Then I had a idea in my head to make breakfast style nachos. I’m going to be honest and say I am not sure which I prefer, the breakfast or the dinner. These sweet potato breakfast nachos are filled with all the classic breakfast toppings to make for a satisfying breakfast or brunch anytime of the week.

Ingredients

These nachos ofcourse start with a base of sweet potato. My favorite sweet potato is the japenese sweet potato, but use whatever you have available. Once you roast the sweet potatoes to be nice and crisp it is time the add the cheese. I choose mozzarella for a nice creaminess to pair with all the other toppings, but you can change it to whatever cheese you prefer. Next up is the meat.  Now I have been a sausage lover since I was little, but you could always substitute bacon. Then time to add the scrambled eggs. I made sure to cook them low and slow so they were nice and fluffy. Next I layered on some fresh red pepper slices for a little crunch. The final main ingredient is some creamy avocado which is a required ingredient for savory breakfast in my opinion. Then just garnish the nachos with a little salt, pepper, and chopped cilantro.

This whole meal can also be made vegan using vegan and dairy free substitutes for the meat, eggs, and cheese. It is a meal that does not require dishes because it is just fun to eat right off the pan. Theses sweet potato breakfast nachos are one of my absolute favorite breakfast because you get a little bit of all your favorite breakfast foods. The other part I love about this meal is how well rounded it is. You have a great source of protein, carbs, and fats to make a healthy and filling meal. So it taste amazing, it is comforting, it is fairly easy, and everyone will absolutely love it. I hope those are enough reason to convince you to make this delicious breakfast!

Sweet Potato Breakfast Nachos

Roasted sweet potatoes with all the savory breakfast toppings
Prep Time 20 minutes
Cook Time 45 minutes

Ingredients

  • 1 lb breakfast sausage, turkey sausage, or vegan sausage or sub bacon
  • 4 small sweet potatoes
  • 6 eggs can use vegan eggs
  • 1/2-1 cup mozzerella cheese can use dairy free
  • 1 small avocado
  • 1 red pepper
  • salt and pepper to taste
  • optional: chopped cilantro for garnish

Instructions

  • Preheat oven to 400 and line a extra large roasting pan with parchment paper or spray with some avocado oil.
  • Wash the sweet potatos and slice each in about 1/4 inch slices and place on the roasting pan in a single layer. Place in the oven and let roast for about 40-45 minutes or until the sweet potatoes are golden brown and crispy. Flip halfway through cooking.
  • While the sweet potatoes cook brown the sausage according to package instructions in a skillet and set aside.
  • Crack and scramble the eggs in a bowl and slowly cook them in a non stick skillet on medium low heat until they are fully cooked but soft and fluffy. Use a rubber spatual to stir consistently.
  • Once the sweet potatos are fully cooked and crispy sprinkle over the mozzerella cheese. Place back in the oven for 2-3 min until the cheese has melted and then remove from the oven
  • Top the potatoes with the sausage and eggs sprinkling them all over. Then layer on red pepper, avocado, and finish with salt/pepper and cilantro
  • Serve immediatley or store in a air tight containter in the refridgerator for 3-5 days and warm up in oven or microwave.
