Smashed Sweet Potatoes

Any smashed potato fans out there!? If so, y’all must try these Smashed Sweet Potatoes. The sweetness from the sweet potatoes are delicious paired into a savory dish. I’m always a fan of savory sweet potatoes for Thanksgiving. Every year my sweet potato bake is requested, but this year I will be trying these out instead.

Ingredients for smashed sweet potatoes
The smashed sweet potatoes start with a variety of colored sweet potatoes. You could also just use one variation of sweet potatoes, but I just love the colors. After the sweet potatoes roast in the oven with a little olive oil, then it is time to gently smash them. This allow the sweet potatoes to really crisp on the outside, but have the soft french fry like middle.  For the toppings, it is just a little salt, pepper, and garlic powder. Then my favorite part is the parmesan cheese and fresh thyme. Parmesan cheese and sweet potatoes are one of my favorite combos. The thyme adds a floraly freshness to the potatoes that just livens them up even more.

I paired these sweet potato with sour cream for a little tang to complement the sweetness. It is a recipe that is can be served with a main meal or an appetizer. I will definitely be making these for my families Thanksgiving! Anyone else prefer the sweet pototoes to good ole’ mashed potatoes or just me?? The best part about Thanksgiving is you get to enjoy a little bit of everything, but I think this will be a great addition to this years feast! Let me know if y’all give these a try.

Parmesan Smashed Sweet Potatoes

Roasted sweet potatoes that are smashed and topped with thyme and parmesan cheese
Prep Time 10 minutes
Cook Time 40 minutes
Servings 4

Ingredients

  • 3 long sweet potatoes (Any color)
  • olive oil spray
  • 3/4 cup parmesan cheese
  • 2 tbsp fresh thyme
  • 1 tsp garlic powder
  • salt and pepper to taste
  • sour cream or greek yogurt for serving

Instructions

  • Preheat oven to 425 and line a roasting pan with parchment paper.
  • Cut the sweet potatoes into 3/4 in. thick slices and spread out on the roasting pan in an even layer.
  • Spray sweet potatoes with olive and place in the oven for about 25 minutes.
  • Take the sweet potatoes out of the oven and gently mash with a fork to slightly flatten to potatoes.
  • Sprinkle potatoes with garlic powder, salt, and pepper. Then place back in the oven for another 10 minutes so the outer edges crisp a little more.
  • Sprinkle the potatoes with parmesan and thyme. Place potatoes back in the oven to melt the cheese for 4-5 minutes.
  • Remove and serve with sour cream or greek yogurt.
