Thin Mint Pizookie

Thin mint cookies are a favorite in my family, especially my grandpa. When I was little my family always would save a box of thin mint cookies to give him as part of his Christmas present and he would eat them right out of the freezer. Then he said it would taste like a chocolate peppermint patty.

I am such a huge fan of chocolate and mint, which is why a thin mint girl scout cookie is one of my favorite cookies. It reminds me of the andes mints and getting them at the end of a olive garden meal after volleyball. This thin mint pizookie is basically a thin mint cookie right in a cast iron skillet. It has a layer of chocolate cookies on the bottom, topped with a chocolate mint cookie dough, and finished with a smooth chocolate topping.  I just don’t think you can get much better then that, especially if you are of fan of the girl scout thin mints. It has a slight crunch on the bottom, but the cookie dough is super fudgy which is the best part of the cookie in my opinion.

Ingredients

This thin mint pizookie is actually very simple to make. It starts with just a plain layer of chocolate cookies right on the bottom. This just adds some texture and extra chocolateyness to the batter. Then I made a chocolate cookie dough with the same base recipe as my other pizookies and a little cocoa powder. I added in a little peppermint extract for the mintyness in the cookie. After you bake the cookie it is time to add the layer of melted chocolate just like the classic cookie. I just melted some dark chocolate with coconut oil and layered it right on top. Then this cookie is ready for a few spoons and to enjoy.

This recipe can be made vegan and gluten free with vegan chocolate chips and chocolate cookies. It has that gooey chocolate center that just cant be beat whenever you are craving a cookie. The best way to eat this pizookie in my opinion is topped with ice cream. I mean a chocolate cookie and ice cream is my absolute favorite.  Anytime you have a chocolate craving or better yet a thin mint craving, this will be sure to hit the spot! Hope y’all enjoy!!!

Thin Mint Pizookie

Equipment

  • 1 8" cast iron skillet

Ingredients

Topping

  • 1/2 cup vegan chocolate

Instructions

  • Preheat oven to 350 and grease an 8" cast iron skillet
  • In a large mixing bowl add the flaxseed with tbsp of water and let gel for 3-5 minutes
  • Add the butter and sugar into the bowl and mix until combined
  • Stir in flour, cocoa powder, peppermint extract, salt, baking powder, and baking soda until everything is evenly incorporated and a dough forms
  • In the bottom of the cast iron skillet make an even layer of chocolate cookies. (It is okay if there are some holes)
  • Then sprinkle the chocolate cookie dough over the cookies and press down to form an even layer of cookie dough over the cookies.
  • Place in the oven to bake for about 25 minutes until dough has set
  • Sprinkle chocolate chips over the top of the cookie and allow to melt for a couple minutes. Then spread the chocolate into a even layer.
  • Option to serve warm so that the cookie is super fudge, or let cool so the cookie sets and gets a little more crumbly, and the chocolate topping forms more of a shell.

Notes

Be sure to use gluten free chocolate cookies if wanting to keep this recipe gluten free.
