Is a classic chocolate chip cookie not the best dessert in the entire world!? It is just the ideal sweet treat warm out of the oven, with milk, or maybe with some ice cream which is my personal favorite. Not to mention when you make cookies you get to eat some of the cookie dough. I actually prefer the dough more then the actual cookie. Since this is a vegan cookie dough you can eat as much dough as you want with it being egg free. These cookies make such a perfect sweet treat for any occasion to make you friends and family happy. It is even better knowing they are a little healthier.
This vegan chocolate chip cookie recipe starts with beating some vegan butter, coconut cream, and sugar. The coconut cream adds some additional fluffiness without any taste of coconut. I used monk fruit sweetener to keep the sugar content low, but plain ole sugar should work just fine. For the flour I did a gluten free flour which adds some fluffiness mixed with some oat flour for texture and sturdiness. All that is left to finish the main part of the dough is a splash of vanilla and ofcourse a pinch of sea salt. Finally, last but not leasts the most important ingredient which is chocolate chips. I chose to use a dark chocolate because I think the cookie is sweet enough. Use whatever chocolate you have on hand or your favorite. Bake them up these vegan chocolate chip cookies and then they are ready to eat right out of the oven. They have that nice crisp outside and gooeyness in the middle.
My favorite way to eat these cookies are hot out of the oven. If I have some leftover cookies in the next couple days I toss it in the microwave for just a few seconds to melt the butter and make the cookie all nice and soft again to have the goey center. I also love taking a couple of these cookies and making an ice cream sandwich. It would be delicious with my vegan chocolate ice cream.
