Vegan Oreo Sandwich

Oreos are just such a wonderful classic cookie we all had growing up. It really is milks favorite cookie and amazing in desserts, like my cookies and cream rice krispy treats, or especially ice cream. I don’t know about y’all but the double stuffed was always my favoite because the icing is the best part in my opinion. I wanted to create my own spin on the classic Oreo cookie. Now I have decided to refer to these as my parent trap Oreos because if you have seen the recent Parent Trap movie, there is a part of the movie where they dip the Oreos in peanut butter. So I have made these Oreos vegan friendly, but also added a layer of creamy peanut butter. That salty peanut butter with the sweet icing is the ideal combination, and chocolate always pairs well with peanut butter. Now if you don’t like peanut butter then just omit and you will still get a wonderful vegan oreo sandwich.

Ingredients

This vegan oreo sandwich of course starts with the base of the chocolate cookie. I have a mixture of vegan butter, coconut oil, and coconut cream as the wet ingredients. All of these combined ensure a moist batter, but a crunchy cookie once cooled. The most important part of the cookie is the black cocoa powder. This is what truly gives the cookie that Oreo taste and color. I used gluten free flour, but regular flour will also work. The best part about it is that this cookie dough is so easy to throw together, and the batter taste pretty good as well.

Then for the icing I decided to use coconut cream. You may be thinking why coconut, but the coconut cream is a very subtle coconut flavor. That is why you add in the vanilla and butter extract. It is just a little healthier then using good ole shortening. I used lakanto powdered sugar and sugar in both the cookie and the icing to keep the refined sugar lower. Then finally for my favorite part, the layer of peanut butter. It just makes this Oreo go to a whole other level.

I feel like Oreos are such a nostalgic cookie. Every time I think of Oreos or eat one I have a memory of my childhood. A classic oreo will always be good, but this healthier version is just as crunchy and sweet as the originals. Then with that added peanut butter, you just get a mouthful of crunchy chocolate goodness. The flavors and sweetness blend so well together. The salt from the peanut butter really does bring out that sweetness and compliments the Oreo flavor so well. So if you craving a chocolate cookie, look no further and give these chocolaty decadent cookies a try!

Vegan Oreo Sandwich

A homeade with a chocolate cookie, layered with a sweet icing, and creamy peanut butter

Instructions

  • First, wisk or use a food processor to blend the coconut cream, powdered sugar, vanilla, and optional butter extract till smooth. Place in the fridge to harden
  • Preheat the oven to 350 and line 2 cookies sheets with parchment paper
  • In a large bowl add 1 tbsp ground flaxseed with 3 tbsp water. Let gel for 3-5 minutes
  • Add the other Oreo ingredients to the flax egg and mix till a dough is formed.
  • Roll the dough into heaping tbsp balls and place on the cookie sheet. Gently press down and cook for about 10-12 minutes until cookies are just set. Let cookies cool completely.
  • Add about 1 1/2 tbsp icing on one cookie and place in freezer for about 20 minutes until the icing sets. While the cookies icing hardens spread the other cookie with about 1 tbsp of creamy peanut butter. (Freezing is optional: but this just ensure a less messy cookie)
  • Once the icing hardens, take out of the freezer and sandwich the peanut butter cookie and icing cookie together. Then ready to eat. Keep leftovers in an airtight container in refridgerator
