Banana Pudding Baked Oatmeal

I always think of banana pudding as a summer time dessert, because it is typically a no bake recipe. I love how easy it is to make, the sweetness, and all the different textures banana pudding has. I was ready for a new baked oatmeal flavor, and so I started brainstorming. I recently made my vegan banana pudding recipe, and thought that would be a perfect baked oatmeal flavor. Oatmeal and bananas go so well together, and I figured it would make for a fun new baked oatmeal flavor. This banana pudding baked oatmeal beat my expectations and the best part is that this recipe could not get any easier!

Ingredients

It starts with the base of rolled oats. The key ingredient in any baked oatmeal recipe because they soak up all the flavor. For the banana pudding part, I added in a box of sugar free banana cream pudding mix or any banana flavored pudding. The pudding gives the oats a delicious creaminess. Then of course a few mashed bananas, because this wouldn’t be banana cream without some fresh bananas. Next up is a few scoops of vanilla protein powder. This adds some extra sweetness and protein to make the baked oatmeal a little more satisfying. Ground flaxseed assist in binding the ingredients while also keeping the recipe vegan friendly. After everything is mixed together, you just put it in a pan and throw it in the oven.

This banana pudding baked oatmeal recipe comes together in one bowl, and then after it cooks it is time for all the toppings. For true banana pudding you need a few vanilla cookies. I added some crumbled graham crackers in place of the cookies. Another favorite topping of mine is a drizzle of peanut butter. Not only does it make breakfast a little more satisfying, I don’t think there is a better combo then banana and peanut butter. You could also add some yogurt, other nuts,  berries, granola, etc.. The sky is the limit when it comes to toppings.

I always appreciate my freezer stash of baked oatmeal when I am running out the door on my way to work. It is so convenient to just grab and go. Don’t get me wrong, I love a bowl of warm oatmeal, but I also love the variety of baked oatmeal. This banana pudding baked oatmeal recipe always puts a smile on my face. Give this a try and it is guaranteed to make a great start to the day.

Banana Pudding Baked Oatmeal

All the flavors of banana pudding in a one pan of baked oatmeal.
Prep Time 10 minutes
Cook Time 30 minutes

Ingredients

  • 1 0.9 oz box sugar free banana cream pudding mix
  • 2 scoops vanilla protein powder I used iheartmacros or nuzest
  • 2 cups dairy free milk
  • 2-3 large bananas one is optional for topping
  • 2 tbsp ground flaxseed
  • 3 cups rolled oats
  • 1 tsp baking powder

Instructions

  • Preheat oven to 350 and line a 9x13 pan with parchment paper
  • Mash 2 bananas in a large bowl and then add all the other ingredients except for the last optional banana.
  • Mix until well combined and pour into the baking pan. Spread the mixture out so it is even in the pan. Optional to top with one more banana thinly sliced or wait till after it is baked.
  • Place in the oven to cook for 30 minutes or until set
  • Let cool and cut into 12 pieces.
  • Refrigerate leftovers for up to 4 days. Freeze individually in plastic wrap for up to 3 months. Warm up with a splash of milk.
