Banana Pudding Baked Oatmeal

All the flavors of banana pudding in a one pan of baked oatmeal.

Ingredients

  • 1 0.9 oz box sugar free banana cream pudding mix
  • 2 scoops vanilla protein powder I used iheartmacros or nuzest
  • 2 cups dairy free milk
  • 2-3 large bananas one is optional for topping
  • 2 tbsp ground flaxseed
  • 3 cups rolled oats
  • 1 tsp baking powder

Instructions

  • Preheat oven to 350 and line a 9x13 pan with parchment paper
  • Mash 2 bananas in a large bowl and then add all the other ingredients except for the last optional banana.
  • Mix until well combined and pour into the baking pan. Spread the mixture out so it is even in the pan. Optional to top with one more banana thinly sliced or wait till after it is baked.
  • Place in the oven to cook for 30 minutes or until set
  • Let cool and cut into 12 pieces.
  • Refrigerate leftovers for up to 4 days. Freeze individually in plastic wrap for up to 3 months. Warm up with a splash of milk.
