Preheat oven to 350 and line a 9x13 pan with parchment paper
Mash 2 bananas in a large bowl and then add all the other ingredients except for the last optional banana.
Mix until well combined and pour into the baking pan. Spread the mixture out so it is even in the pan. Optional to top with one more banana thinly sliced or wait till after it is baked.
Place in the oven to cook for 30 minutes or until set
Let cool and cut into 12 pieces.
Refrigerate leftovers for up to 4 days. Freeze individually in plastic wrap for up to 3 months. Warm up with a splash of milk.
