Banana Bread Chocolate Chip Cookies

All the flavors of banana bread combined in a chewy chocolate chip cookie.

Ingredients

  • 3/4 cup coconut sugar
  • 1 cup gluten free flour or all purpose flour
  • 1 medium banana
  • 1/2 cup rolled oats
  • 1/2 cup melted butter can use vegan
  • 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 3/4 cup dark chocolate chips
  • 1 tbsp arrowroot

Instructions

  • Preheat oven to 350 degrees.
  • In a bowl mash the banana until smooth.
  • Add melted butter and sugar to the banana and mix till smooth.
  • Fold in the remaining ingredients except chocolate chips until evenly combined.
  • Add chocolate chips and mix into the batter.
  • Scoop batter in tbsp sized balls and place on a baking sheet about 1 1/2" apart.
  • Place in the oven to bake for 8-10 minutes until just set. Let cool for 10 min and ready to enjoy.
  • Keep leftover cookies at room temperature for 3-5 days.
