Preheat oven to 350 degrees and grease an 8" cast iron skillet
In a medium mixing bowl add the ground flaxseed with 3 tbsp of water and let set for 3-5 minutes until gelled
Add in the butter, 1/4 cup cookie butter, and sugar then stir till evenly combined
Fold in flour, baking powder, baking soda, sweetener, cinnamon, oats and salt.
Stir till evenly combined and place dough in the non stick skillet. Press dough down to form an even layer in the skillet.
Drop remaining cookie butter around the top of the cookie dough and gently swirl/spread around the top. It will not fully cover the dough.
Place in the oven to cook for 25 min
Serve warm with vanilla ice cream
