Parmesan Roasted Brussel Sprouts

Crispy brussel sprouts coated in a balsamic reduction and topped with parmesan cheese

Equipment

  • 1 12" cast iron skillet

Ingredients

  • 16 oz halfed brussel sprouts
  • 1 tbsp balsamic reduction (thick balsamic vinegar)
  • 1/2-1 cup dairy free parmesan or regular if not vegan
  • salt to taste
  • avocado oil spray

Instructions

  • Preheat oven to 350 and heat a large cast iron skillet coated with avocado oil on medium high heat
  • Toss the half brussel sprouts with the balsamic reduction in a large bowl. Then place flat side down on the cast iron skillet and let cook for 2-3 minutes until brown to charred or crispy then flip
  • Cook the other side for an additional 2-3 minutes until charred and then sprinkle each with parmesan cheese (skip if you are using regualr parmesan). Place in the oven for 20 minutes until the cheese is melted and brussels are tender. (Add regular parmesan cheese the last 2-3 minutes because it will melt faster)
  • Remove from oven and sprinkle with flakey sea salt if desired. Then ready to serve

Notes
