Cookie Butter Pizookie

A spoon full of cookie butter is one of my favorite sweet treats, but add that to a pizookie and oh my goodness! You get the warm cinnamon and butteryness of the cookie butter mixed with a sweet cookie. I am telling you this is a combo that you just have to try! I have made 10 pizookies in the pizookie series and this one is the finale. We are ending the pizookie series with a bang.

Ingredients

It starts with the normal pizookie dough I have been using in all the other recipes. The difference with this pizookie is adding in cookie butter to replace half the butter. I also added some additional cinnamon to blend the cookie butter in even more with the cookie dough. Once you place the cookie dough in the cast iron skillet, I topped it with even more cookie butter. The cookie butter takes on a little bit of a crust after it is baked and just kind of melts right into the batter. I honestly think this is probably my favorite pizookie yet!

I know y’all know by now that I love topping my pizookie with ice cream. I feel like it is an extra important addition with this cookie butter pizookie. Something about the warmness of the cinnamon in the pizookie and cold vanilla ice cream is just the best. I was very nice and shared this pizookie with my friends and family and they loved it as well. I hope yall will give this pizookie a try as well as all the others. Cookie Butter Pizookie

A warm buttery dough swirled with cookie butter
Prep Time 15 minutes
Cook Time 25 minutes

  • 1 8 in. cast iron skillet

Instructions

  • Preheat oven to 350 degrees and grease an 8" cast iron skillet
  • In a medium mixing bowl add the ground flaxseed with 3 tbsp of water and let set for 3-5 minutes until gelled
  • Add in the butter, 1/4 cup cookie butter, and sugar then stir till evenly combined
  • Fold in flour, baking powder, baking soda, sweetener, cinnamon, oats and salt.
  • Stir till evenly combined and place dough in the non stick skillet. Press dough down to form an even layer in the skillet.
  • Drop remaining cookie butter around the top of the cookie dough and gently swirl/spread around the top. It will not fully cover the dough.
  • Place in the oven to cook for 25 min
  • Serve warm with vanilla ice cream
