Cookies and Cream Pizookie

I had a request for a cookies and cream pizookie and that is exactly what I made. This is the second to last pizookie flavor in the pizookie series. And who doesn’t like a cookies and cream flavor everything especially a pizookie!? I love cookies and cream of almost any food, especially ice cream. It is my favorite when I find the big chunks of chocolate cookies all throughout the vanilla ice cream. There is no shortage of cookies and cream flavor in this recipe, and it could not be any easier to make. So how do we make it??

The dough starts with the same base as all my other pizookie flavors. It has never steered me wrong in all other recipes so why change it up now. To the buttery dough, which I love to eat some of plain,  I folded in plenty of crushed up oreos.  That way you get the classic cookie and cream flavor. I mean what is better than milks favorite cookie in this recipe. The cookie chunks kind of melt into the dough to make it rich and sweet. To finish it all off is some optional vanilla ice cream. That is just a must! There is just no better way to serve a cookies and cream pizookie then with some melty vanilla ice cream.

I love chocolatey cookie chunks with that buttery dough. It is the best hot out of the oven when the cookie is still melted and you get a scoop of some of the melted ice cream. I don’t think there is anything better then that bite. Now, I hope I have convinced you to run to the kitchen and give this recipe a try. Then after be sure to try my other flavors!

Cookies and Cream Pizookie

A buttery dough mixed with plenty of chocolate cookies
Prep Time 10 minutes
Cook Time 25 minutes

Equipment

  • 1 8" cast iron skillet

Ingredients

  • 1/2 cup vegan butter
  • 3/4 cup lakanto monk fruit sweetener or cane sugar
  • 1 tbsp ground flaxseed
  • 1 1/2 cups gluten free flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of salt
  • 1 tsp vanilla
  • 12 oreo cookies

Instructions

  • Preheat oven to 350 and grease an 8" cast iron skillet
  • In a medium mixing bowl add the ground flaxseed and 3 tbsp of water and let set for 3-5 minutes to gel
  • Add the sugar and butter into the bowl and stir till combined
  • Add flour, baking powder, salt, baking soda, and vanilla into the butter mixture and mix until well combined and a dough is formed
  • In a large ziplock bag place the oreo cookies and crush until until you still have a few decent size chocolate cookie chunks
  • Fold the cookies into the dough
  • Place the dough into the greased cast iron skillet and press down to make sure it is an even layer. Place in the oven for about 25 min until just starting to get golden brown
  • Serve warm for a goey cookie or cold for a more set chewier cookie.
